Does depo take care of inventory while managing deposits?

Yes, depo takes care of the inventory. By default when you take payments through Online store the inventory is removed as soon as you get the deposit amount from the customer. In case of Draft Orders you can set the desired timing until the inventory is reserved, Since Draft Orders give flexibility you can decide whether to reserve inventory or not
